Lockdown Warm Bean Salad
The UK is in lockdown because of coronavirus, at the time of
writing this recipe I would like to say thank you to everyone doing there bit
to keep everyone safe especially the Health services, here and around the world.
This is a great recipe for
when you don’t have much in the cupboard, or a tin of beans that have been hanging
around for a while and great for these times when supermarket shelves are a bare
and the only thing you found was a tin of mixed beans, which is a great item to
have in your cupboard and this is why:
Beans are really good for
you, full of nutrition and cheap to buy. (Fresh, dried or tinned)
Beans contain high levels
of protein which makes them an important part of a meat-free diet; they also
contain vitamins B1, B6, E, and K. They are high in fiber and low in calories
good for those who wish to lose weight, they also contain copper, zinc, manganese,
and selenium
Cooking time: 10-15 minutes
Serves: 2
Ingredients
- 1 400g Can of mixed beans
- 1 clove of garlic
- 1 carrot (sliced thin using a mandolin or grated)
- 2 stalks of celery sliced thin
- 2 bay leaves and a teaspoon of thyme (fresh or dry)
- 1 tsp tomato puree
- ½ tsp chilli flakes
- Hand full of chopped parsley
- Salt & pepper (to your taste)
- 1 onion sliced
- 2 Tbs oil
- 1 stock cube of your choice (i used vegetable)
- Splash of Lemon juice or vinegar (I used vinegar because I couldn’t find any lemons in the shops)
- Handful of spinach
- 300mls of boiling water from a kettle
Method
- In a Wok/pan gently fry garlic, onion, carrot, celery for about 2 minutes.
- In a jug add the stock cube, boiling water and liquid from the beans (if using tined) fill the jug to 300mls pour into the wok/pan.
- Add bay leaves, thyme, and salt & pepper, lemon juice or vinegar
- Bring to a boil for 2 minutes add the tinned beans (if using dried cook first according to the packet ) turn the heat down to a simmer for 5 minutes
- add tomato puree and spinach and parsley ( keep some for the garnish)
- serve in a bowl with a nice chunk of bread.
