Cheesy Cornmeal and Cornmeal Bake
In 2016 i visited South Carolina, and for the first time
ever i tasted Grits and instantly loved them. When i arrived home i looked for
them but in England they are not that available unless you seek out a special
store, i learned that cornmeal is similar as it also comes from corn.
Similar
to cornmeal; grits are made from dried
and ground corn but are usually a coarser grind. Grits are often made from
hominy, which is corn treated with lime—or another alkaline product—to remove the
hull.
I
decided to recreate the grits i had in South Carolina by using cornmeal, i was
amazed how delicious it turned out. Even my house mate loves it. Plus any
leftover can be made in to cornmeal/grits bake. Hope you enjoy the two
recipes.
Cheesy Cornmeal
Recipe:
- 1600 mls water
- 150g Butter
- Salt & Pepper to taste
- 1 tsp onion powder
- ½ tsp garlic powder
- ½ tsp smoked paprika
- 300g coarse Cornmeal
- 400 mls milk
- A sprinkle of nutmeg
- 200g mature cheese grated
- A small onion
- 1Tbsp Butter
Method:
- In a large pan add water butter salt & pepper, garlic, smoked paprika, bring to the boil.
- Slowly whisk in the cornmeal turn down the heat to low for 10 minutes. Keep stirring so not to let it stick to the bottom.
- When thick slowly whisk in 400mls of milk.
- Add a sprinkle of nutmeg.
- Add 100g of the cheese; keep whisking for another 10 minutes.
- When done turn off the heat and stir in the rest of the cheese.
- Fry chopped onions in butter until browned. And use to garnish on the top when serving in your favourite bowl.

Cornmeal Bake
Recipe:
- Cheesy corn meal (I used about 1kg)
- 2 eggs
- 50g grated cheese
Method:
- Once the cheesy cornmeal has cooled, whisk the eggs together and in a big bowl stir them in to the cornmeal.
- Add to a flan or pie dish put in the fridge for 2- 3 hours or until you need them the next day.
- Before baking sprinkle with cheese and bake in the oven at 200c, 400f, gas mark 6 for 30 minutes or until golden brown
(I served mine with a piece of fish)

developed their own different way to prepare it. Cornmeal, grits, and polenta,
them are similar dishes, but there are some differences that make each dish
distinctive in its own way.
