Vegetarian Penne Bolognese
I consider myself a Pescepollotarian, a person who does not
eat red meat or land animals.
I were vegetarian when i was 15 years old, and
then it was on and off for about 10 years. I still eat a lot of vegetarian
food, after all it is food and not just for vegetarians lol. I like the soya
based veggie mince it is a nice alternative to meat.
This is quick, simple and tasty
meal is ideal for midweek when you are knackered and can't wait for the weekend lol . I am sure you will like it as much as i do.
Serves 2 - 4
Ingredients:
- 200g Penne pasta
- 2 Tbsp veggie oil
- 1 carrot chopped small
- 1 onion chopped
- 2 celery sticks chopped
- 400g tin of chopped tomatoes.
- Handful of chopped frozen rainbow peppers.
- 1tsp garlic powder.
- 1tsp smoked paprika.
- 1tsp oregano.
- Salt & pepper to your taste.
- Add 200mls of hot water to 1 veggie stock cube.
- Add extra water if needed to loosen the Bolognese.
- A handful of fresh basil, and grated cheese for garnishing.
Method:
- Put the penne pasta on to boil in a pan of hot water about 3- 4 minutes until tender
- In a wok of big pan Add the oil, carrot, onion fry for 1 minute.
- Add the celery
- Add the mince and the rest of the ingredients except cheese and basil
- Cook for about 15 - 20 minutes until carrots are tender.
- Add the pasta to the Bolognese and stir it in.
- Add some of your torn basil in to the wok keep some leaves for garnish.
- Serve on to your plate and garnish with grated cheese and basil leaves.
