Cauliflower Soup
There are lots of health benefits to eating cauliflower.
Cauliflower is high in fibre and B-Vitamins, it can help
strengthen bones.
The outer leaves which most of us throw away are where a lot
of the nutrients are.
I have put together a really delicious soup that uses all
of the cauliflower greens and florets

Russell Hobbs Food Collection Hand Blender 200 W - White
Ingredients
- 1 small – medium Cauliflower
- 1 onion chopped
- 1 tsp garlic puree
- 50g mixed nuts
- 1000mls/1 litre chicken stock (2 stock cubes) or vegetable
- 450 mls soya milk (or your preferred milk)
- Salt and pepper to taste
- 3 basil leaves (or 1 tsp of dried)
- ½ tsp nutmeg
- ½ tsp cayenne pepper
Slow Cooker Method
Crush the nuts in pestle and mortar. Chop up the cauliflower
and the greens, then put everything in your slow cooker on high for 1 hour, then
turn to low for 2-3 hours. When cooked, using a hand blender wiz up the soup. Serve with a dusting of nutmeg and cayenne
pepper.
Stove Top Method
You will need a wok or big pan. Chop up the cauliflower,
onion and greens. Crush your nuts then place everything in your wok bring to
the Boil, simmer for 10 - 15 minutes with the lid on, until cauliflower is
tender. Take your wok off the stove let cool slightly, then blend it all
together using a hand blender, or put it in a food processor. Put it back in the
pan on the heat and bring back to a simmer. Serve dusted with little nutmeg and
cayenne pepper.
